Bonocosì: Authentic Italian Restaurant and Pizza al Metro in Vilnius

Bonocosì is an authentic Italian restaurant in the center of Vilnius, founded by Calabrian native Gianluca Armone. His idea is simple: Italian cuisine doesn’t need to be reinvented; it’s enough to respect its traditions, family recipes, and high-quality ingredients.

We visited Bonocosì at Vilniaus St. 18. From the very first moment, the restaurant immerses you in a warm Italian atmosphere. The interior is bright and photogenic, with many carefully chosen details. The furniture, décor, and even the tableware were brought from Italy to create the feeling of a true Italian restaurant. There is also a small balcony with tables, while during the warmer months a summer terrace opens.

The signature of Bonocosì is Pizza al Metro, a long-format Italian pizza made for sharing. It can be ordered in two sizes — 1 or 1.5 meters — and is served in the center of the table for everyone to enjoy together.

The dough is prepared with Bonocosì’s own LI.CO.LI. natural starter and undergoes a long fermentation. Carefully selected Italian flours are used, together with Italian tomatoes and fior di latte from Agerola. The result reflects the restaurant’s approach to Italian pizza: simple ingredients, careful preparation, and respect for tradition.

Authentic Italian pasta also plays an important role on the menu. Guests can find tortelli, strozzapreti, spaghetti, and other pasta dishes inspired by traditional Italian recipes.
Much of Bonocosì’s production is done in-house, including the pizza dough, bread, sauces, and desserts. The bread changes regularly, so guests might be served white or whole-grain bread, bread with olives, or versions with salami and pecorino.

Be sure to save room for tiramisù, one of Bonocosì’s signature Italian desserts. It is made according to Gianluca’s grandmother’s secret recipe, with mascarpone, coffee, savoiardi, and cocoa. This family recipe and the attention given to Italian traditions capture the philosophy behind Bonocosì particularly well.

On weekdays, from 11:30 AM to 3:00 PM, Bonocosì also offers an Italian business lunch in Vilnius.

There are two Bonocosì restaurants in Vilnius, both offering the same main menu. They are suitable for a family lunch, dinner with friends or colleagues, birthdays, and larger groups, while Bonocosì also welcomes private events and special occasions. Pizza al Metro is particularly well suited to sharing around the table, just as food is meant to be enjoyed together in Italy.
