In the heart of Tallinn’s Old Town, Koyo Restaurant is a gateway to the refined world of haute Japanese cuisine. The restaurant’s name derives from the Japanese word kouyou: the changing colours of autumn leaves, beautifully reflecting Koyo’s philosophy – deep respect for nature’s rhythms, mindfulness, and the belief that true luxury lies in being fully present in the moment.

Koyo offers an exclusive Japanese omakase experience, meaning “I leave it up to you.” There is no traditional à la carte menu; instead, guests place their trust entirely in the chef’s intuition, craftsmanship, and creativity. The result is an intimate and immersive dining journey where every course becomes part of a carefully choreographed culinary performance.

Chef Hokari Kazuto relocated from Japan to Estonia to share his passion for authentic Japanese cuisine. Each evening, only two dinner seatings are offered, featuring a meticulously curated 14-course omakase menu shaped by the finest seasonal ingredients available that day. Sushi takes centre stage, with signature highlights including eel and akami tuna, personally prepared and presented by Chef Kazuto, who guides guests through the story and character of every flavour.

The restaurant itself is exceptionally intimate: just 11 bright-red seats surround an elegant L-shaped counter, allowing guests to observe every detail of the preparation process. This setting perfectly embodies the Japanese philosophy of omotenashi, wholehearted hospitality expressed through genuine care, precision, and harmony.

The experience is complemented by a thoughtfully curated beverage programme, featuring rare sakes, premium wines, and champagnes selected to elevate each course.

Koyo has earned international recognition for its exceptional quality and authentic approach to Japanese fine dining. The restaurant is featured in the MICHELIN Guide Estonia 2025 and 2026, where inspectors praised Chef Kazuto’s personable omakase experience, outstanding sushi craftsmanship, and carefully selected sake and wine pairings. Koyo has also been recognised in the Falstaff Restaurant & Bistro Guide Nordics 2025 and 2026, earning an impressive 93 Falstaff points in the 2026 guide and being listed among Estonia’s top restaurants.
